Kozhi Biryani

Kozhi Biryani Recipe in pressure cooker with step by step pictures and instructions.
Ingredients
- 600 gram Country chick
- 3 large Onions chopped lengthwise
- 500 gram Basmati Rice
- 5 medium sized Tomatoes chopped lengthwise
- 50 gram Mint leaves
- 50 gram Coriander leaves
- 10 Tbsp Ginger garlic paste
- 5 gram Whole garam masala
- 80 ml Cooking oil
- 2 tsp red chilli powder
- 1 tsp Coriander powder
- 1 tsp Garam masala
- 1 tbsp Ghee
- 2 tsp lemon juice
- 1/4 cup Curd
- 5-10 green chillies(Depending on spice preference)
- to taste Rock salt
- 1/2 spoon turmeric powder
Step by Steps
Step 1
Soak Basmati rice for 20 minutes. In a pressure Cooker add oil and then add whole garam masala.
Step 2
Then add Green chillies and onions and saute till onions turn brown.
Step 3
Add Ginger garlic paste and saute till raw smell goes off
Step 4
Add tomatoes and Rock salt and cook till tomatoes turn mushy
Step 5
Add chopped mint leaves and coriander leaves and saute for 2 minutes.
Step 6
Now add the Country chicken pieces and some turmeric powder and cook for about 5 minutes.
Step 7
Then add 1/4 cup curd and cook the chicken for 10 minutes
Step 8
Then add Chilli powder, coriander powder and garam masala. Saute the masala for 2 minutes
Step 9
Add water in the ratio of 1:1.5 (Rice and water) and pressure cook the chicken for 30 minutes. Whistle count doesn't matter.
Step 10
Then open the lid and add basmati rice that is soaked for 20 minutes, some chopped coriander leaves and mint leaves and lemon juice.
Step 11
Add ghee and gently mix everything well and cook on low flame for 20 minutes. Do not give whistles. Once pressure releases serve the Biryani with raita/gravy of your choice.
Notes
We always get country chicken with skin and turmeric applied
You can increase green chilli or red chilli powder for more spiciness. This is mild spicy suitable for kids.
